dc.description.abstractEl propósito de esta investigación fue determinar la prevalencia de Aspergillus sp. y Penicillium sp. en concentrados comercializados a granel para aves de corral en el mercado de Valledupar, Cesar (Colombia). Para ello, se recolectaron muestras de concentrado en ocho establecimientos, considerando las etapas productivas de inicio y engorde. En total se analizaron 32 unidades experimentales mediante siembra inicial en medio Dicloran Rosa de Bengala con Cloranfenicol, se incubaron a 25 °C por cinco días y se realizó el recuento de colonias típicas. Posteriormente, cada colonia con morfología distintiva fue resembrada en PDA hasta lograr cultivos puros, que permitieron la observación macroscópica y microscópica de los hongos, para su identificación a través de claves taxonómicas. Los hallazgos revelaron que 19/32 unidades experimentales fueron positivas para hongos filamentosos de los géneros Aspergillus y/o Penicillium, con una prevalencia general de contaminación fúngica del 59,4 %. Por etapa, la prevalencia fue de 56,2 % en el concentrado de inicio y de 62,5 % en el de engorde. En cuanto a los géneros evaluados, Aspergillus presentó una mayor prevalencia (40,6 %) en comparación con Penicillium (25 %). Se identificaron tres especies de Aspergillus: A. flavus (52,6 %), A. niger (36,8 %) y A. fumigatus (15,7 %). La prueba de Kruskal-Wallis no mostró diferencias significativas entre géneros (p = 0,161) ni entre etapas productivas (p = 0,893). No obstante, se evidenció que Aspergillus presentó un recuento promedio mayor en ambas etapas. Todas las muestras analizadas cumplieron con los límites microbiológicos establecidos en la NTC 2107:2021 (≤ 1,0 × 10⁵ UFC/g). Summary The purpose of this research was to determine the prevalence of Aspergillus sp. and Penicillium sp. in bulk feed concentrates for poultry sold in the market of Valledupar, Cesar (Colombia). To this end, feed concentrate samples were collected from eight establishments, considering the initial and fattening stages of production. A total of 32 experimental units were analyzed by initial inoculation in Dichloran Rose Bengal medium with Chloramphenicol, incubated at 25°C for five days, and typical colonies were counted. Subsequently, each colony with distinctive morphology was reseeded in PDA until pure cultures were obtained, which allowed macroscopic and microscopic observation of the fungi for identification using taxonomic keys. The findings revealed that 19/32 experimental units were positive for filamentous fungi of the genera Aspergillus and/or Penicillium, with an overall prevalence of fungal contamination of 59.4%. By stage, the prevalence was 56.2% in the starter concentrate and 62.5% in the finishing concentrate. Among the genera evaluated, Aspergillus had a higher prevalence (40.6%) compared to Penicillium (25%). Three species of Aspergillus were identified: A. flavus (52.6%), A. niger (36.8%), and A. fumigatus (15.7%). The Kruskal-Wallis test showed no significant differences between genera (p = 0.161) or between production stages (p = 0.893). However, Aspergillus was found to have a higher average count in both stages. All samples analyzed complied with the microbiological limits established in NTC 2107:2021 (≤ 1.0 × 10⁵ CFU/g).
