dc.description.abstractResumen: Las plantas aromáticas a través de la historia han tenido gran importancia en el ámbito medicinal y en algunas culturas también son utilizadas para ambientar sus espacios y preparar sus alimentos. Hoy día el auge de las plantas aromáticas radica en que las personas han visto la necesidad de ser saludables y por medio de la alimentación se puede lograr; por esta razón que todos quieren tenerlas en su cocina. Decidimos trabajar sobre el diseño y construcción de un secador de bandejas por flujo de aire caliente para plantas aromáticas al notar la necesidad de las personas de conservar estas plantas, ya que de manera natural las hojas frescas son de difícil conservación; entonces, sí realizamos un secado con un equipo como el que diseñamos podemos conservarlas en un mejor estado. En la universidad popular del cesar a través del programa de ingeniería agroindustrial en la asignatura operaciones unitarias le enseñan a los estudiante a identificar los diferentes fenómenos que ocurren al momento de transformar la materia prima en subproductos industriales; especialmente se enfocan en los procesos de secado (aplicación de calor para perder agua) en una muestra; cuando decidimos realizar el proyecto también quisimos dejar el equipo a disposición del programa para que dichos estudiantes se beneficien con el equipo ya que podrán realizar ensayos y pruebas que les permitan verificar lo visto en la teoría. Luego del diseño y construcción del equipo se procedió con los ensayos de laboratorio para comprobar el correcto funcionamiento del mismo, logramos obtener unas curvas de secado mediante la deshidratación de hojas de toronjil y orégano, dando como resultado que es un equipo funcional para los objetivos trazados, al cual se le pueden hacer aún muchas mejoras lo cual permitirá un mejor entendimiento de fenómenos físicos que se dan durante el secado. Abstract: The aromatic plants throughout history have had great importance in the medicinal field and in some cultures they are also used to decorate their spaces and prepare their food. Today the boom of aromatic plants is that people have seen the need to be healthy and through food can be achieved; For this reason, everyone wants to have them in their kitchen. We decided to work on the design and construction of a tray dryer by hot air flow for aromatic plants, noting the need of people to preserve these plants, since naturally fresh leaves are difficult to preserve; Then, if we do a drying with a team like the one we design, we can preserve them in a better state. In the popular university of the Cesar through the program of agroindustrial engineering in the unit operations subject they teach the students to identify the different phenomena that occur at the moment of transforming the raw material into industrial by-products; especially focus on drying processes (heat application to lose water) in a sample; when we decided to carry out the project we also wanted to make the equipment available to the program so that these students can benefit from the team, since they will be able to carry out tests and tests that allow them to verify what is seen in the theory. After the design and construction of the equipment we proceeded with the laboratory tests to verify the correct operation of it, we managed to obtain drying curves by dehydrating leaves of lemon balm and oregano, resulting in a functional equipment for the objectives set, to which you can still make many improvements which will allow a better understanding of physical phenomena that occur during drying.
